Oatmeal Butterscotch Cookies Recipe

This is the first recipe that me and mom did together. I got to help measure, level flour, pack the brown sugar, mix and scoop the dough to put on the cookie sheet. Scooping the dough was my favorite!




Oatmeal Butterscotch Cookies Recipe

1 cup of softened unsalted butter

3/4 cup white sugar

3/4 cup packed brown sugar

2 eggs

1 teaspoon vanilla extract

1 1/4 cup & 1 tablespoon all purpose flour

1 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

3 cups rolled oats

1 cup butterscotch chips

Preheat oven to 375 F

  1. In a large mixing bowl, stir together flour, baking soda, cinnamon, and salt. set aside.
  2. In a separate bowl, beat butter, white sugar and brown sugar. (Recommend using a electric mixer).
  3. Once beaten, add eggs and vanilla, continue to mix.
  4. Gradually add the flour mixture to the butter mixture, stir until combined.
  5. Stir in oats and butterscotch to the mix.
  6. Cover and refrigerate for half an hour or longer.
  7. Scoop out about 2 tablespoon of dough, place on ungreased baking sheet.
  8. Bake for 10 min at 375 f
  9. Let cool and eat!
