Grandma’s Zucchini Bread

Makes two loafs

3 cups all purpose flour

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

1 tablespoon ground cinnamon

3 eggs

1 cup vegetable oil

2 1/4 cups sugar

3 teaspoons vanilla extract

2 cups grated zucchini with skins

Preheat oven 325. Grease and flour two 8×4 bread pans

  1. in a large mixing bowl, sift flour, salt, bakingĀ  soda, baking powder and cinnamon. Set a side
  2. In another large mixing bowl add eggs, oil, sugar and vanilla extract. beat well for 2 to 3 minintes.
  3. slowly add the shifted flour mix to the egg and sugar mix. beat untill combined.
  4. Add the grated zucchini to the mix and mix with with a large spoon.
  5. Pour batter into prepared pans. Bake at 325 for 40 to 60 minutes or until a toothpick comes out fairly clean and moist.
